Thanksgiving at my house turned out to be a big success. There were 11 of us and lots of leftovers. I thought the turkey was still a little dry (maybe I should have injected it again while it was cooking) but the turkey tasted great with the gravy I made. My wife made the stuffing, mashed potatoes and salad. Her parents brought the honey-baked ham and cranberry sauce, and her relatives brought drinks, yams, and vegetables.
We got away from the start of the holiday shopping season by heading out to Las Vegas for the weekend. We stayed at the Excalibur as room rates were very high due to the Thanksgiving Holiday. It was a pretty relaxing trip and it was nice to leave knowing that I didn’t lose money at the blackjack tables for a change.
I did get sick on Thansgiving day and haven’t been able to shake it off yet. This is the second time I’ve been sick in the past 2 months. I hope this is it especially since I didn’t get a flu shot this year.

Turkey day is getting closer and I’m preparing for the big day. This will be the first year that Eugenia and I will be making a turkey. We’ll also be making mashed potatos, salad, stuffing and an apple pie. There are so many recipies for turkey marinade so I’ll just pick one that is easy. Right now i’m thinking of using 1 cup olive oil, 1/2 cup soy sauce, and 1/2 cup lemon juice, a little butter and placing onions, celery, italian seasoning and garlic inside the turkey. I bought a turkey injector which is basically a syringe used to inject the turkey with marinade. I supposedly will help prevent the turkey from drying out which is very common with the breast meat. I’ve looked on the web and read a few other ways people have prevented it by using a brown paper bag or flipping the turkey breast side down for a portion of the baking. The injector seemed the easiest of the options. I just have to make sure the marinade doesn’t have anything that will clog the needle.
